Low-Carbon Recipes
It’s low-carbon Thursday again, so here’s a hale and hearty dish. It’s high in energy, in terms of personal gains, but low energy in terms of environmental impact!
Ingredients:
2c cooked lentils
1 1/2 c cooked and sliced potatoes
1c diced roasted peppers and zucchini
1/2 c soya mayonnaise
Preheat oven to 350′F
In a greased oven-proof dish, place the roasted vegetables, then the lentils, then potatoes and spread the soya mayonnaise on top. Bake covered for 30 min, then take the lid off and bake for further 15 - 20 min - until the soya mayonnaise has a light brown tinge.
